One of the key pillars of the Upupa Epops the Bar team, Thodoris brings 14 years of experience in hospitality and cocktail bars.
As Bar Manager, he helps shape the bar’s identity through technical expertise, consistency, and strong organizational skills.
A certified bartender and Ron Barceló Brand Ambassador, he focuses on team training and the continuous evolution of the cocktail menu.

With 12 years behind the bar and 7 years at Upupa Epops, Laertis is drawn to tequila, character-driven cocktails, and constant experimentation.
As the instructor of the Zero Waste seminar, he ensures every ingredient is used to its full potential — with smart technique and purpose.
He believes the bar is the best place to create unforgettable experiences — and when he’s not mixing, you’ll likely find him chasing the next adventure on his motorcycle.

With 10 years in hospitality and 6 years behind the bar, Stefanos believes bartending is not only about the drink — it’s about the experience.
Since 2022, he has been part of the Upupa Epops team, working with professionalism, calmness under pressure, and a strong focus on human connection.
For him, the bar is a space of communication — where every guest should leave feeling better than they arrived.

Head Bartender
Part of the Upupa Epops the Bar team since its very first day in August 2016, Triantafyllos is now in his tenth year behind the coffee machine.
By rough estimate, he has served more than 500,000 freddo espressos and cappuccinos to our guests.
Previously, he worked as Head Barista in venues across Thiseio and Amarousio — and despite the daily grind, he proudly says he’s still going strong.

Active in hospitality since 2013 and behind the bar since 2016, Petros has been part of Upupa Epops since 2023.
A member of the Fogcutters collective, he has trained through seminars and collaborations across multiple bar projects.
In 2024, he won both the Greek and global finals of the JNPR No & Low ABV Cocktail Competition in Paris — driven by a love for classics, creativity, and great hospitality.

With nearly two decades of experience in hospitality, Dimitris approaches the bar as a place of connection — where the drink supports the moment.
At Upupa Epops, he values precision, clean flavors, and deep respect for raw ingredients, guiding guests with a calm and thoughtful presence.
He is also active in the premium spirits world through educational and consulting collaborations.
